What you first described is glitching.

Cheesing are guys who simply exploit flaws in the AI to play stupidly unrealistic and still have success. In older games, the FB dive was a GUARANTEED 4 yards EVERY play, the NANO blitz could sack the QB very he even got out of his first drop, and there were certain plays every year that would work every time against the AI no matter what defensive play you called.

well cheesing/glitching kind of go hand in hand in sports games. People glitch the same play over and over and over again, so it could be somewhat categorized as cheesing
