Superbowl Odds
I'm sure you have seen some power rankings with the Falcons rated 5th or so. That actually falls in line with current Vegas odds on which team will win the next Super Bowl. At 8-1 against, the Falcons are tied for 5th with the Packers. The Texans, Giants, Patriots and 49ers all have shorter odds than the Falcons.

I bought my Super Bowl ticket for the Falcons last May when the odds were 25-1. Not bad eh? Only the Falcons have seen their odds triple in 2012 although the Texans, Giants and Bears have doubled. The Packers have actually dropped a bit since May.

Interestingly the Falcons have been steady at 8-1 since early September and so the win streak has not changed the odds. Perhaps if the Falcons drop a game at some point you can pick up better odds but maybe not. I thought about laying off some of my action and locking in a win on my bet, but then decided to let it all ride for the time being. If the odds get down to 5-1 or better I will reevaluate.

RE: Superbowl Odds
Remember, odds are not about expected outcome, but about what people are willing to bet the outcome to be.
Even if Vegas has a sure thing, they will give better odds to what people are betting on.

These odds just mean more people are willing to bet on those "proven" teams, not that we are less likely to win it all.
Good luck with that bet! I missed the trip to Vegas this year to buy my ticket at the early odds.
